About the Owner
Yoshitsugu "Kaysan' Nishikawa was born on a small
farm just outside of
Tokyo, Japan. Kaysan
was raised by a traditional Japanese family that never taught him to know what
life was like outside his small village. From early childhood, he was forced to carry buckets of water and rice to and from his house
and a nearby village in order to make ends meet. At the age of 18, Kaysan
made the pilgrimage to Tokyo in hopes of making a better life for his family.
While living in Tokyo, Kaysan worked as an assistant
to a sushi chef and saw first hand how traditional Japanese sushi was prepared
and individually hand carved. Kaysan knew that
he had found his calling in life and decided to enroll in the local culinary school.
After years of hard work Kaysan realized that living and working in Tokyo was limiting his
true potential, so he
set out to expand his education overseas. Kaysan's travels took him as far east
as Europe, where he learned the ways of tapas and wine, and then Argentina,
where he taught young children how to fish. He worked and studied across the
world for
many years, becoming the culinary master you know and adore today.
Aside from the typical restaurant owner, Kaysan is fluent in 4 languages, including English, Spanish, Portuguese and his native tongue, Japanese. He is also know to throw lavish parties, and usually welcomes all members of the community.
